Black garlic

Black garlic is obtained when the garlic (in our case 1st quality garlic) is aged under special conditions of temperature and humidity. The garlic heads are kept in a special greenhouse with controlled temperature (60 to 80º) and humidity (80 to 90%) for a long period of time. 
There are no additives, preservatives or burning of any kind. The enzymes that give fresh garlic its sharpness are broken down and new aromatic compounds are obtained, responsible for the deep flavor of grilled meat and fried onions. The cloves turn black and develop a sticky, date-like texture.
 Bacterial endophytes capable of fermentation and with a strong ability to resist heat have been identified in common garlic and black garlic.
 In Black Garlic, the garlic flavor is softened to such an extent that it almost or completely disappears. Its flavor also depends on the fresh garlic used. In our case, we use first quality leftover garlic, which gives our Black Garlic an intense and pleasant flavor that is much appreciated, especially in cooking.
